Mango Pudding:
Ingredients:
1 cup full fat coconut milk
2 tbsp chia seeds
1 cup mango pulp
1 tsp Yacon syrup
Garnish: toasted walnut and almond pieces

Method:
1. In a bowl, mix coconut milk, chia seeds, and mix well.
2. Cover and refrigerate overnight.
3. In a blender, combine mango blend until smooth.(mango pulp)
4. Layer chia pudding and pureed mango evenly.
5. Garnish with toasted walnut and almonds and serve immediately.

Mango mousse:
Ingredients:
1 cup Mango pulp
1/2 cup full fat coconut cream
1 tsp Yacon syrup

Method:
1. Whisk mangoes, yacon syrup and coconut cream in a bowl until smooth and fluffy consistency.
2. cover and refrigerate for one hour.
3. Serve in a glass chilled.
